Thank you for reminding me about this too! We have it here in France, and it grows locally. Yet it's such an Italian thing to me that I somehow can't put it in context. Yesterday I saw real radicchio di Treviso and I almost bought it. Next time I'm at the farmer's I'll pick it up for risotto, though a chef once taught me to put it in a plate, cover with clingfilm, blitz it in the microwave for 3 mins, then give it a quick sear in hot oil in a pan (preferably cast-iron) with salt.

Love the pasta idea with mascarpone!

I hear you. Sometimes it’s hard to find inspiration when ingredients are out of context. This happens to me as well! You have now set off my craving for a radicchio risotto. One for the menu this week!

I love the whole chicory family; sadly they're difficult to find in the UK, usually only in a few expensive greengrocers.

It’s very frustrating isn’t it? It would be great if both the Ireland and UK could widen their vegetable horizons so that these ingredients could be made available to the wider population for all of the reasons we know!

We know they're there. They're at farmers markets, well radicchio sometimes is. And chicory is found in Waitrose and independent grocers. But the other chicory;endive family, it's like they're a niche vegetable, still in the 'queer gear' category. It's something I'd planned to write about in January.

Looks like you saw what I have in my kitchen! Just roasted a pumpkin and bought a mixed baby radicchio salad mix at the weekly market! that's lunch today. I will add some avocado and toasted nuts.

As soon as radicchio shows up at the market, I buy as many kinds as possible. I also adore grilling it.
